Oopumavu(semolina)- is coarsely ground wheat grain. A spicy dish resembling coucous

Ingredients

Semolina 1 cup
Mustard seeds ½ tsp
Curry leaves 10
Red Onion 1 medium (diced)
Ginger minced 1 tsp (minced)
Green chili 1(minced)
Cashew nuts 12-15 split into ½

1 tsp Ghee
2 tbsp Oil
Salt to taste
1 cup Water (add more or less accordingly)

Method:

• Heat pan.
• Dry fry semolina on medium heat until it turns light brown.
• Remove semolina from pan and set aside.
• Return pan to stove. Add oil and ghee.
• When oil is warm, add mustard seeds.
• After the seeds crackle, add curry leaves, onions, green chili and cashew nuts.
• Sauté on medium heat for about one minute until onions soften and turns transparent.
• Add ginger. Sauté for another minute.
• Meanwhile boil water in a kettle.
• Add hot water and salt to the fried mix.
• When the liquid begins to boil, gently put in the fried semolina and keep stirring.
• Mix semolina well until all the liquid has been absorbed. Cook on low heat for another minute.
• Remove from heat and serve.
