Mango chutney PDF Print E-mail

A lovely accompaniment for Bhajis Ingredients


1. 2 tbsp malt vinegar
2. ¼ tsp crushed dried chillies
3. 3 cloves
4. 3 peppercorns
5. ½ tsp roasted cumin seeds
6. ¼ tsp onion seeds
7. Salt to taste
8. ¼ cup sugar

9. 200gm semi ripe mango (peeled & diced)
10. 1 inch ginger (julienne)
11. 1 clove garlic (julienne)

Method

1. In a dry saucepan, heat vinegar with crushed dried chillies, cloves, peppercorns, roasted cumin, onion seeds, salt and sugar on a low flame.

2. Simmer for about 15 minutes-to let the flavours of spices infuse into the vinegar.

3. Add cubed mango pieces, sliced ginger and garlic.

4. Simmer till mango is mushy and most of the vinegar has evaporated.

5. When cool pour into sterilized jars and leave for a day before serving.
