Very popular dish in UK and  a lovely side dish with vegetarian or non -vegetarian meal
BOMBAY POTATO


Ingredients

1. 200gm baby potatoes
2. 3 medium shallots (finely chopped)
3. 1 green chilli (finely chopped)
4. 1 inch ginger (finely chopped)
5. ½ tsp turmeric powder
6. ½ tsp mango powder
7. Salt to taste
8. Oil and ghee 1dsp each
9. Coriander leaves a few (chopped finely)


For seasoning

10. ½ tsp mustard seeds
11. ½ tsp cumin seeds
12. A few curry leaves



Method
• Remove skin of parboiled baby potatoes.
• Heat 3 tsp oil in a pan. When hot, add seasoning, i.e. mustard seeds, cumin seeds and curryleaves
• When mustard seeds splutters, add finely chopped onion ginger and green chilli.
• Stir until onions turn soft,
• Next add turmeric powder, salt and mango powder. Stir fry for 2 minutes.
• Add baby potatoes and stir well.
• Cook on a low flame for about 5 minutes.
• Serve hot, garnishing with coriander leaves
