A lovely variation of onion Bhajis

Ingredients

1. 150 gm chickpea flour (gram flour or besan)
2. 1 tsp rice flour
3. Salt to taste
4. ¼ tsp turmeric powder
5. ¼ tsp soda bi carbonate
6. 1 onion peeled and chopped finely
7. 1 green chilli de-seeded and finely chopped
8. ½ inch ginger chopped finely
9. 10-12 curry leaves chopped finely (optional)
10. 1 tbsp chopped fresh coriander leaves
11. 100 gms diced/ sliced turkey pieces
12. Water to make a thick batter
13. Sunflower oil (for frying)

Method

1. Put gram flour in a large bowl and mix ingredients 2-10.
2. Add water to fairly thick, droppable consistency.
3. Heat a minimum of 3 inches of oil in the centre of the wok on medium heat.
4. To test if the oil is hot enough, sprinkle a few drops of batter into it, they should rise to the surface immediately.
5. Take a dessert spoonful of the mixed batter and place it into the oil.
6. Continue doing so till they form a single layer in the wok/deep pan fryer.
7. The safest way to avoid oil splashing is to lower the fritter gently into the oil.
8. Remove with a slotted spoon.
9. Fry each side until golden brown and crisp.
10. Remove the fritters with a slotted spoon and place them in a plate lined with absorbent kitchen towel.
