Meen (Fish) curry A very famous keralite dish where fresh fish is cooked in earthen pot-giving an authentic flavour. A significant dish during Christian weddings in Kerala and is usually prepared 2-3 days in advance. Ingredients: 1. 250 gms Salmon (slightly thick 2 inch pieces) Seasoning: 2. 1-2 tbsp Coconut oil/sun flower oil 3. ½ tsp Mustard seeds 4. A sprig Curry leaves 5. 2 Shallot (finely chopped) 6. 2 cloves Garlic (finely chopped) 7. 1 inch Ginger(finely chopped) Mix in a little water: 8. ½ Chilli powder 9. 1tsp Paprika 10. ½ tsp Pepper powder 11. ¼ tsp Turmeric powder 12. A pinch Fenugreek powdered 13. 2 pieces Kokum ( wash it well, tear it and soak in water) 14. Salt to taste Method 1. Soak kokum and fenugreek in ½ cup water. 2. Heat oil. When hot, add mustard seeds. When they splutter, add curry leaves. As soon as the lovely aroma appears, 3. Add shallots. Sauté till lightly golden brown. 4. Next add ginger and garlic. Keep stirring so that it does not stick to the bottom of the pan. Fry till the lovely cooked aroma appears. 5. Mix ingredients 8-11 in a little water to make a fine paste. 6. Add to the sautéed ingredients and stir fry till oil separates 7. Add the kokum and fenugreek water, salt to taste and bring to boil. 8. Place fish pieces gently into the curry and twirl the pan in order to coat the fish with gravy. This sops the fish from breaking too 9. Simmer on medium flame until the curry becomes quite thick and oil floats on top. |
