GOAN PRAWN

Ingredients

1.   225 gm     Prawn (uncooked)
2.   1 big    Onion
3.   1 inch     Ginger (paste)
4.   2-3cloves Garlic (paste)
5.   ½ tsp.  Turmeric
6.   1 tsp.  Cumin powder
7.   1 tsp.  Paprika(for mild curry) or ¼ tsp chilli
powder for hot curry
8.   ½ packet Coconut cream (block)
9.   1-2 tbsp Tomato Puree
10.   1   Green chilli (whole) - the thinner variety is
hotter than the thicker one
11.   3-4 tbs.  Oil
12.   Salt  to taste
13.   A few         Coriander leaves

Method
•  In a dry saucepan, add oil. Then fry the onion in oil until golden brown.
• Add ginger and garlic paste and fry until the lovely aroma appears.
• Next, add the turmeric, cumin, and chilli powder and fry for a minute.( keep stirring so the powders won’t get burnt)
• Then add tomato puree and salt.  When the oil separates, add the prawns.
• Cook on a very low heat till the prawn changes colour .
• Next, add the solid coconut cream and a whole chilli. Cover and cook again on low heat till the cream melts completely.
• If the gravy is very thick, add a little water.
• Garnish with coriander leaves.
• Serve hot.

Tips
Use raw prawns instead of ready cooked, as they absorb the spicy flavours and are more succulent.
Defrost prawn completely and do not over cook the prawns, or else they become chewy.
