Baked Salmon PDF Print E-mail

My sister -in -law cooked this dish and it tasted absolutely delicious. She has kindly given me the recipe to cook and demonstrate for my family, friends and students. All  have enjoyed the dish and I am glad to share it with all of you too.



BAKED TROUT OR SALMON

INGREDIENTS :


1. Trout/Salmon                        whole fish or fillet

2. Hot chilli powder                  ½ - ¾ tsp
3. Red Paprika                         1 ½ dsp
4. Pepper powder                    ½ - ¾ tsp
5. Salt                                         to taste


6. Mustard seeds                       1 tsp
7. Fenugreek                              ½ tsp (whole)


8. Onion                                      2 big (Chopped finely)
9. Ginger                                    3” (minced)
10. Garlic                                    5-6 (minced)
11. Tomato                                4 (cut into small pieces)
12. Salt                                       to taste
13. Sunflower oil


Garnishing
14. Red onion                            1 (round slices)
15. Capsicum                             1 (round slices)
16. Coriander leaves                a handful


METHOD:

1.    Add a little water to items 2-5 and grind to a smooth paste.
2.    Rub half the paste on either sides of the fish and let it marinate for an hour.
3.    Pour about 2-3 tbsp oil in a pan. When hot, fry marinated fish on a medium flame till both sides turn golden brown. Remove.
4.    In a saucepan, season mustard seeds and fenugreek seeds in 3-4 tbsp hot oil.
5.    When mustard seed splutters, add the chopped onions and fry until golden brown.
6.    Next, add minced ginger and garlic and fry until the lovely aroma appears.
7.    Add chopped tomatoes and fry until oil separates.
8.    Add salt and the remaining paste. Again fry until the lovely aroma appears and the oil separates.
9.    Place ½ the fried mixture at the bottom of the casserole and place the fish over it
10. Cover the fish with the rest of the fried mixture.
11. Cover the dish with tin foil and bake at 150-160
     degrees Centigrade or gas mark 4 for ½ an hour.
12. Garnish with coriander leaves, sliced red onion, and   sliced capsicum.
