Ingredients
Ladies finger 200 gms
Sunflower oil 1 tbsp
Mustard seeds ¼ tsp
fenugreek seeds (optional) a pinch
Curry leaves 8-10
Dried red chillies 2-3
Shallot 1 chopped finely
Turmeric ¼ tsp
Salt to taste
Plain yogurt 3-4 tbsp
Oil for frying
Method:
• Wash & wipe dry lady’s finger with kitchen tissue towel and remove the head & tail part, cut into thick round pieces and keep aside.
• Deep fry lady’s finger in a wok till crisp. Remove
• Heat 1 tbsp oil and sprinkle in mustard seeds. When the seeds start to crackle, add fenugreek, curry leaves and dry chillis.
• Add shallots and fry till golden brown.
• Stir in the turmeric.
• Place yoghurt in a bowl and add salt to taste.
• Next, add the cooled ladies finger.
• Garnish with the fried ingredient over the lady’s finger mix.
