Turkey in creamy coconut sauce PDF Print E-mail

A very delicious and popular curry sauce from Kerala which uses coconut milk and spices to enhance the authentic flavour.

Ingredients


1. 500g leftover cooked Turkey breast, cut into bite size pieces
2. Sun flower oil 3 tbsp

3. Mustard seeds 1 tsp
4. Curry leaves 10-15
5. Shallots 6-8 medium


6. Garlic cloves 2-3 (cut finely)
7. Ginger 1 inch (cut finely)
8. 200ml/7fl oz carton of coconut cream or coconut milk

Dry spices

9. Red chilly powder ½ tsp
10. Paprika 1 tsp
13. Coriander powder 1 tbsp
14. Turmeric powder 1 tsp
15. Black pepper powder ½ tsp
16. Garam masala ¾ tsp full
     (3 cardamom, 3 cloves and 1/4 inch cinnamon stick -powdered finely together)
17. Fennel powder (fennel seed powdered) 1 tsp
18. Salt to taste


Method


1. Heat oil in a dry saucepan. Add mustard seeds. Allow them to splutter.

2. Next, add curry leaves and finely chopped shallots. Fry till golden brown.

3. Mix ingredients (9-16) in a little water and make a smooth paste.

4. Add paste to the fried shallots mix and sauté until the lovely aroma of cooked spices emanate.

5. Then add coconut milk stir and cook till gravy thickens.

6. Lastly add turkey and cook until heated through.
