Vegetable Pulao Rice PDF Print E-mail

VEGETABLE PULAO RICE

Serves 6 people

INGREDIENTS

1. 16 fl oz Basmati rice
2. 4 tbsp Sunflower oil
3. 3 Cardamom
4. 1 inch Cinnamon stick
5. 3-4 Cloves
6. ½ tsp Onion seed
7. 1 Green Chilli (slit-optional)
8. ½ tsp. Turmeric powder
9. 1 tsp. Salt
10. 250 gm Frozen mixed vegetable


METHOD

• Place rice in a big bowl and wash 2-3 times till water becomes clear. (Washing rice removes the starchy powder left over from milling process).
• Drain, add 2 pints of water and soak for 10 minutes. (This allows each grain absorb water so it sticks less to the next grain while cooking).
• Drain and leave in a sieve set over a bowl for 10 minutes.
• Heat the oil in a dry saucepan and when hot, add cinnamon, cardamom, cloves and onion seeds. Cover with the lid for 3-4 seconds to prevent spluttering.
• Add slit green chilli and turmeric powder and stir till the lovely aroma appears.
• Next add the frozen vegetables and salt and stir for a minute.
• Reduce heat and add the rice. Stir for 2-3 minutes, then add 600ml/1 pt water and bring to boil on medium flame.
• Once the water starts boiling, cover tightly, reduce heat to very low and cook for 12 minutes. Turn off the heat and let the pan sit for, covered and undisturbed, for a further 10 minutes.
