How to make a marsalla (gravy)?
The base for gravy for approximately 250 gms vegetable /meat.
Dice 1 big onion, grate 1 inch ginger and 2-3 cloves garlic, cut green chillie finely(depending how pungent you want the curry to be
In 2-3 tbsp Sunflower oil/ghee,saute onion until golden brown(This gives the taste to the gravy)
Next add ginger/garlic and green chilli. Saute till the cooked aroma appears. Stir constantly as the ginger/grlic mix sticks to the bottom of the pan.
Next add 2 diced tomatoes and cook till oil separates from the mixture.
Add mixed spices of your choice in a little water-to make a paste - this stops the spices from getting burnt.Stir until the cooked aroma appears.
Add the vegetable /meat of your choice. Cook for 5 min. Then add either water/coconut milk to thicken gravy and salt to taste.
For more thickness and flavour add 1 tbsp ground almond or cashewnut(mix in a little water to make it a paste) and add to the curry, when it is almost done Garnish with coriander leaves.

Comments: i have knowledge of how to mix spices to obtain a specific taste but do not yet know how to make a gravy (massalla)? can you please advise?
Why do we soak rice?
We soak rice in water for about 20 minutes. This allows each grain to absorb water so it sticks less to the next grain while cooking.
Why do we wash rice?
Washing rice removes the starchy powder left over from milling process.
