| How to make a marsalla (gravy)? |
 | The base for gravy for approximately 250 gms vegetable /meat.
Dice 1 big onion, grate 1 inch ginger and 2-3 cloves garlic, cut green chillie finely(depending how pungent you want the curry to be
In 2-3 tbsp Sunflower oil/ghee,saute onion until golden brown(This gives the taste to the gravy)
Next add ginger/garlic and green chilli. Saute till the cooked aroma appears. Stir constantly as the ginger/grlic mix sticks to the bottom of the pan.
Next add 2 diced tomatoes and cook till oil separates from the mixture.
Add mixed spices of your choice in a little water-to make a paste - this stops the spices from getting burnt.Stir until the cooked aroma appears.
Add the vegetable /meat of your choice. Cook for 5 min. Then add either water/coconut milk to thicken gravy and salt to taste.
For more thickness and flavour add 1 tbsp ground almond or cashewnut(mix in a little water to make it a paste) and add to the curry, when it is almost done Garnish with coriander leaves.
Comments: i have knowledge of how to mix spices to obtain a specific taste but do not yet know how to make a gravy (massalla)? can you please advise?

 | We soak rice in water for about 20 minutes. This allows each grain to absorb water so it sticks less to the next grain while cooking. |
 | Washing rice removes the starchy powder left over from milling process. |
